I'm actually not the biggest fan of stamps on serviettes...
Food coloring is one matter but stamp ink is a different matter. 
I just got very confused.... 
Personally, fusion food should have a wow factor, should be exciting and even surprising but here at Shui Yue, just don't expect as much as I did though... In this tiny space seats up 25 and only has 1 menu for the evening. We didn't even know there was a vegetarian option till we saw the menu and was told it had to be ordered in advance.On top of that, never have I repeated myself about a booking three times and, explain that we've booked a table and then one of the waitresses blankly looked at me as if I've gone to the wrong place too... Either she was having bad day or I actually had a bit of a total bad day on this day as well... Since my Dad and I were the first to arrive at the restaurant, we weren't offered any drinks and since there was only one bottle of a sparkling water, we decided to open it. A little after when my Mom and Sister arrived, that was when one of the waitresses offered us to have a look at the drinks menu. I must say, the services (to my standard) was poor. Anyway! We were recommended to this place by a friend and personally, for fusion and gastronomic food, you do kind of expect a little more right? Food was bland like it wasn't properly seasoned and I had a really hard time lifting my head up trying to listen and concentrate to the waiter whom was explaining each dish's cooking process.

Shrimp with Salted Egg Yolk 
I really liked this one, expect the fact that you really had to place the whole piece of flatted dry shrimp into your mouth without getting all the salted egg yolk all over yourself... As for the Stone Grilled Abalone, it really reminded me of Stone Grill (steak house) we use to go to. Though it's quite the excitement to cook the abalone on the steaming hot stone, mine kept falling into the salt... It kind of made me wonder how many times the salt's been used to place the hot stone with. Though the stone didn't retain the heat too well, the abalone went really well with the seaweed and vinaigrette dressing.

Deep Fried Shrimp Ball with Crab Roe and Longan

When you take the first bite, it's very moist and you get three different textures within a bite. In the dish with black swirly paste is actually squid ink mayonnaise. It did give a more smokey flavor to the Fried Shrimp but then the flavors so much stronger which it had completely over powered the sweetness of the Longan.

To cleanse our palettes, we were given an empty bottle with a straw filled of Lime flavored foam. The four of us thought we were given empty bottles with a white straw. 

Roast Lamb Rack with Sichuan Pepper
Finally! A dish that I really enjoyed was this Lamb Rack with Sichuan Pepper, the lamb was well cooked but the flavor of the Sichuan pepper was a little over powering and has even covered the original flavor of the meat itself.

From all of the courses, the main and dessert were very well made from the rest of the menu. 
Overall, much of the food were very bland and the most disappointing were the starters. The ideas of the dishes were very creative but with insufficient seasoning, the really didn't taste much of anything. Why did I say service wasn't that great? Because I felt very pressured by the staff to finish my plate for every dish. One waitress kept looking over my Dad's shoulder twice to see if he had finished his share of food. Still holding his cutlery in hand with the last bite in his mouth, she quickly grabbed the plate off. Even though it's not a restaurant with Michelin star or considered high end but Hong Kong itself, lacks the basic training when it comes to services.  Since it was my Sister's birthday, I tried to over look many of the flaws and enjoyed their company instead.

Cakes never fail to disappoint but I would address this though, as much as I love the cakes from C'est la B, but from personal experience, I didn't have the greatest experience ordering and picking up the cake... Nevertheless, Let Them Eat Cake!
